LAYERED PINK CHIA PUDDING

 

CHIA PUDDING

1 Cup nut milk

4 Tbs chia seeds

1 Tbs maple syrup

1 Tsp vanilla essence

1Tbs Being Co. Pink Pitaya Powder

Mix together and place in a jar. Refrigerate overnight.

PINK PITAYA SMOOTHIE

2 frozen Bananas
1/4 Cup Frozen Strawberries
Place in blender and mix until you have a thick consistency.


METHOD

Divide chia pudding between two jars, then layer the coconut yoghurt, granola, 
Pink Pitaya Smoothie and top with blueberries. 

NOTE: This yummy layered chia pudding is not only high in protein, but dairy free, gluten free and packed with fibre, vitamin C, rich in antioxidants, omega 3 and 6 and essential fatty acids.  And you can make the Chia Pudding the night before. They will last 3-4 days in the refrigerator covered. A perfect Grab n Go breakfast.  Perfect!
